The blood of the Hebrew Mosaic Covenant includes animal sacrifices that atoned yearly for the sins of the children of Israel.
The blood of the Covenant is Jesus Christ fulfilling the requirements of the Mosaic Covenant by being the sacrifice provided by God to and for the Hebrew people to finally and totally and eternally atone for the sins of the children of Israel in covenant with God.
Jesus did not come to destroy the Law but to fulfill it and this He did on the night He was betrayed "He took bread, and gave thanks, and brake it, and gave unto them, saying, This is my body which is given for you: this do in remembrance of me. Likewise also the cup after supper, saying, This cup is the new testament in my blood, which is shed for you." Lk 22:19–20.
The New Covenant prophesied by Jeremiah 31:31-34 is the Mosaic Covenant between God and the children of Israel fulfilled by the Lamb of God sent in accordance with the Mosaic Covenant Law instructing and commanding sacrifices offered by God Himself in the New Covenant to atone forever for the sins of the children of Israel.
God has taken the seed of Abraham full circle from the Abraham covenant to the New Covenant and has bound Himself eternally and personally to the children of Israel through His Son, the Redeemer, the Prophet like unto Moses and the Son of God and the King of the Jews thus completing Israel's redemption by the life, death and resurrection of Jesus Christ the Savior of the Hebrew people.

Literal blood without the Spirit of Christ or breath of spirit life must be poured out at the altar. . a living sacrifice. . . not dead lifeless flesh and blood so it can return to the lifeless spiritless field of clay . (Dust and water) Blood?
Both water and blood represent the unseen labor of Christ's eternal love as a work of his faithfulness . The "let there be" kind) again lifeless spiritless must be poured out to help give meaning to the parable "drink blood ..eat flesh"
Christ pouring out His Holy Spirit life on dying flesh and blood in jeapordy of his own eternal Spirt life.
