The blood of the covenant refers to the animal sacrifices under the Mosaic covenant. This is a covenant between God and the seed of Abraham, a people known as the children and house of Israel.

Jesus came to fulfill the Mosaic covenant through His blood as substitute for the animals sacrificed under the Law and finally and eternally sacrificing Himself to and for the children and House of Israel ONLY. God has no covenant with non-Hebrew Gentiles. Thus, the New Covenant described in Jeremaih 31:31-34 is a continuation of the Mosaic covenant in which Jesus was sacrificed according to the Law and in place of the animal sacrifice which God used to atone for the sins of the children and House of Israel as per the Mosaic covenant.
The New Covenant is only the Mosaic Covenant fulfilled by Jesus. The Mosaic covenant was nailed to His cross joining His sacrifice of Himself to and for the children and House of Israel just as the animal sacrifice was to and for the children and House of Israel under the Mosaic covenant.

There is no atonement to and for non-Hebrew Gentiles as there is no covenant between God and non-Hebrew Gentiles anywhere mentioned in Scripture of Law, Psalms, and Prophets.
The writings from Matthew to Revelation were written by Jewish Christians to and for the children and House of Israel living in Gentile lands and is discussion and discovery of the New Covenant era the children and House of Israel found themselves in post-Messiah and Holy Spirit of Promise arrival and their effect upon the previous two covenants (Abraham and Mosaic.)

Because of the two previous conquests and exiles of Israel and its people by the Assyrian and Babylonian empires, the sending of Jewish Christians "to the Gentiles" is a good news gospel message from God to and for the children of Israel living in Gentile lands and is a message that Messiah and Holy Spirit of Promise have arrived and God has keep His Promise(s) promised to their fathers (Abraham, Isaac, and Jacob.)

All references of "Gentiles" in the writings of the New Testament from Matthew to Revelation are identified as Jew-Gentile mixed heritage and as long as these "Gentiles" who are the offspring of Jew-Gentile mixed heritage are Abraham's seed then the covenant promises are meant for them. There are no non-Hebrew covenants between God and non-Hebrew Gentiles. None. These mixed heritage offspring of Jew-Gentile did not live as Jews and under the Law but lived as Gentiles in Gentile lands and influenced by Gentile culture having lived so long in Gentile lands.
Just as Gentiles today who are "born-again and saved would have a Hebrew/Jewish parent somewhere in their ancestry and are recipients of God's Promises to His people, a people from Abraham's seed. The Samaritans are type and shadow of this ethnical fact. There were four conquests and scattering of Abraham's seed in human history (Assyrian, Babylonian, Roman, and Germanic) exile and scattering and the children and House of Israel and Judah were scattered by God to and among non-Hebrew Gentiles. Mixed heritage was the result. What you are espousing is Replacement Theology, a typical Gentile aberration that has been repeated after Gentiles witnessed the destruction of the Jewish Temple in 70 AD. Upon this event they saw their opening to steal Israel's inheritance and everything God gave to them in covenant and in prophecy. But I wonder why Gentiles didn't clamor and steal Israel's inheritance while the Temple still stood.
They didn't and they couldn't because Gentiles hated the Jews, and the feeling was mutual towards those unclean, uncircumcised Philistines.
Do you have an excuse why Gentiles would say after the Temple's destruction they were in Abraham's covenant and why they didn't make those claims before when the Temple was destroyed and was still standing?

Greed, envy, theft are the acts of Gentiles who saw an opening and stepped in to fill the void when they never had God's permission to do so. Oh, I'm not even sure what god they would have asked. Maybe the god of silver? Or gold? Or stone, or maybe the god of fertility? Which god did they seek guidance from because there is nowhere in Scripture, you know, the Hebrew Scripture that was for doctrine, reproof, correction, and instruction in righteousness that was given to the children of Israel, the same Scripture Jesus said "cannot be broken" and that Israel was commanded to live by every word from that proceedeth from the mouth of God that made it to press.

So, tell me, why didn't Gentiles claim they were in the Abraham covenant (Gal. 3:29) when the Temple was still standing those four decades after Israel's Messiah ascended into heaven?

These Gentiles are half-Jew and half-Gentile. Like Samaritans. They are still Abraham's seed. No matter the DNA dilution, the Lord knows them that are His and as long as they have at least one Hebrew parent in their ancestry they are still Abraham's seed.
